I’ve fallen into a “shake-things-up” kind of mode lately. Do you have those moments, too? Sometimes, it hits me that I tend to repeat things that seem to work just fine. Until…I get bored out of my mind, or realize that maybe those things really aren’t working all that fine. Then, decide that everything I do needs to be revamped. Everything. Yes, even cocktails. Typically, when I mix cocktails, I tend toward fruity, citrusy and refreshing flavors. Then, the other day, I came across a bottle of coffee liqueur in the cabinet. I love coffee liqueur…what have I been waiting for?
The White Russian is a classic cocktail from the mid sixties made with vodka, coffee liqueur and cream. This type of drink is kind of cross between cocktail and dessert. But, I’ve found a secret ingredient to easily create a nutty, creamy version that just happens to be vegan. Silk’s Toasted Coconut and Cashew Nutchello is a really tasty nut-based drink that replaces the cream and creates a yummy cocktail! But, really, it’s wonderful on its own with a few ice cubes, a straw and a cozy spot to put up your feet.
Toasted Coconut White Russian
Ingredients
- about 5 ice cubes
- 1 ounce vodka
- 1.5 ounces coffee liqueur
- 2 ounces Silk Toasted Coconut and Cashew Nutchello
- 1 teaspoon toasted coconut for garnish optional
Instructions
- Add the ice to a short cocktail glass. Add the vodka and coffee liqueur. Pour the Nutchello over the back of a spoon over the glass to create a layered effect. Stir and garnish before sipping.

because i love coconut so much, i’ve taken to adding malibu rum to my white russians instead of vodka. i’d be a fan of this version as well, i’m sure!
